Savory Chewy Granola Bars

We’ve been working on a recipe for savory granola bars for a WHILE. It’s a tough nut to crack. For starters, the texture we associate with granola bars generally requires a lot of sweetener, which is, well, not all that compatible with savory flavors. So, after making several “blah” versions omitting syrups of any kind, we threw in the towel and added some honey. And whaddya know? A little bit of sweetness was the answer when it came to both flavor and texture. But the honey is just one of the—admittedly unexpected—combination of flavors that makes these work. Black olives, lime zest, tahini, miso, nori, AND chickpeas, you ask? YES! Try it! Umami deliciousness!!! And, with the addition of egg whites, beans and nuts, the result is protein-dense and super satisfying.

Instructions
Preheat oven to 325°F.
In a small bowl, combine ground chia seeds (3 Tbsp), olive oil (2 Tbsp), honey (½ cup), miso (¼ cup), tahini (¼ cup), egg whites (2), and lime zest (1 lime).
In a medium-large bowl, combine oats (2 ½ cups), hemp seeds (½ cup), sunflower seeds (¼ cup), nori (¼ cup), cashews (½ cup), roasted chickpeas (1 cup), olives (½ cup) and sea salt (½ tsp).
Pour the wet ingredients into the dry and combine thoroughly.
Line a 10x10" (or similar sized) ovenproof baking pan with parchment and press down to be about ¾" thick.
Bake for about 30 minutes until browned all over. Let cool completely and cut into bars.
