Pumpkin Spice Overnight Oats

Instructions
In a mixing bowl, use a fork to stir together the squash (¼ cup), milk (½ cup), cottage cheese (¼ cup), maple syrup (1 Tbsp), and vanilla extract (½ tsp).
Use a spatula to fold in the remaining ingredients and stir to combine. Cover the bowl and place in the refrigerator over night, or for at least four hours.
Fifteen minutes before you serve, remove the oats from the fridge, give them a stir and let them come up to room temperature.
Top with some nuts and a drizzle of maple syrup and dig in!
