“Energy Bars”— an absurd category, really, since all food is energy. But, for the sake of simplicity, that’s what we’re calling these delicious, orange-scented pistachio-date bars. After all, in texture (if not in flavor) they closely resemble the sort of packaged things you might buy on the go when you need quick, convenient sustenance. And, because they’re loaded with good fats, low-glycemic fruit sugars, and lots of protein and fiber, they really will sustain you and your kiddos when you most need sustenance. Oh, and did we mention they’re OUTRAGEOUSLY DELICIOUS???! We don’t even know why, exactly, they just are!

Instructions

  1. In a large food processor, pulse the following ingredients until sandy: pistachios (1 cup), pumpkin seeds (1 cup), hemp hearts (½ cup), coconut chips/flakes (¾ cup), and powdered chlorella (¼ tsp) (if using).

  2. Add the vanilla (½ tsp), dates (10), avocado oil (2 Tbsp), orange zest (1 orange), and salt (1 pinch), and pulse until the ingredients begin to clump together.

  3. Line a square or rectangular baking dish with parchment and press the mixture down with your hands or the back of large spoon until it's about ½–¾ inch deep.

  4. Sprinkle sesame seeds/shredded coconut (¼ cup) liberally overtop and press it in to the bars.

  5. Wrap dish and refrigerate until totally firm (you can speed this up in the freezer). Cut into bars (or whatever shape you like) and wrap individually in parchment to take on the go.

  6. Store in the fridge in an airtight container until ready to eat.
